Hispanic Heritage Month (September 15 – October 15) is a time to honor the vast range of Spanish-speaking cultures and communities. In Philadelphia, two establishments are taking that mission to heart, going beyond the expected to curate experiences that both enrich and give back. Bolo and Hyatt Centric Center City Philadelphia are each marking the month in ways that highlight the many dimensions of Hispanic heritage — from the flavors and traditions of the kitchen to the stories and perspectives expressed through art.

Bolo, Philadelphia’s Latin American dining room and rum bar from two-time James Beard Awards semifinalist Chef Yun Fuentes, is celebrating Hispanic Heritage Month with its fan-favorite Suckling Pig Dinner. Served family-style, the centerpiece dish features a whole slow-roasted pig marinated with achiote, oregano, garlic, and sour orange, accompanied by verde salad, rice, gandules bean stew, maduros, and mofongo. Normally priced at $65, the dinner will be available for $50 per person for the duration of Hispanic Heritage Month.
To complement the feast, Bolo Rum Bar is offering two festive cocktails available exclusively during the month: the Suavecito (Diplomático Mantuano Rum, guava, lemon, peach bitters) and the Boléro (El Jimador Silver and Herradura Reposado Tequilas, pineapple, lime, angostura bitters). For each of these cocktails sold, $1 will be donated to Norris Square Neighborhood Project, alongside 15% of sales from the Suckling Pig Dinner, further connecting Bolo’s celebration to the preservation of Puerto Rican culture and youth-focused community programs in Philadelphia.
Reservations are encouraged via OpenTable, though walk-ins are always welcome at the Rum Bar.
Hours of operation: Dinner service Monday through Thursday 4pm – 10pm, Friday and Saturday 4pm – 12am, and Sunday 4pm – 9pm; Happy Hour Monday through Friday 4 – 6pm and Saturday from 10pm – 12am
