Bluebird Distilling, the award-winning grain-to-glass distillery nestled in the heart of downtown Phoenixville (100 Bridge Street), is thrilled to announce a sweeping $2 million renovation that will usher in a new era for the Pennsylvania craft distillery. Beginning this month, which also marks the distillery’s 10th anniversary, Bluebird Distilling will kick off construction including a full-scale transformation of its distillery and tasting room—adding a full-service Neo-Neapolitan pizzeria and restaurant, an expanded bottle shop and retail experience, a striking new central bar, and a coffee program by sister company, Char & Stave.
The phased renovation of Bluebird Social: Cocktails & Kitchenby Bluebird Distilling, slated for completion this winter, has been thoughtfully designed to ensure that Bluebird Distilling’s cocktail bar and retail shop remain open throughout the construction process.
The centerpiece of the reimagined space will be a custom-designed, rectangular communal bar with seating for approximately 30 guests, surrounded by warm, industrial-chic design details a cozy “barrel room lounge” featuring a decorative fireplace and custom-made banquettes. The goal: to bring back the sense of community and vibrant socialization that Bluebird Distilling has always championed.
“We’re not just expanding—we’re evolving,” says Bluebird Distilling Founder and Master Distiller, Jared Adkins. “This next chapter is all about crafting a deeper, more dynamic guest experience. We want people to gather, linger, and connect over everything we do—spirits, food, coffee, conversation. That’s what Bluebird is all about.”
The new open-air Neo-Neapolitan kitchen will feature scratch-made pizza dough, house-baked breads, seasonal sandwiches, and fresh salads—all designed to pair seamlessly with Bluebird Distilling’s robust cocktail program. Guests can cozy up at the chef counter seating while digging into the brand-new food offerings and stellar libations. The bar will also boast a selection of local beer and wine and an expanded coffee and espresso program by Char & Stave—Adkins’ coffee roastery and DTC brand known for its cheeky tagline: “Coffee made by whiskey people.”
The upgraded retail space will include a floor-to-ceiling barrel stave installation, in addition to expanded bottle shop offerings, showcasing Bluebird Distilling’s full line of grain-to-glass spirits—including limited-edition bourbons, ryes, gins, and rums—as well as Char & Stave’s bottled coffee liqueurs, amari, and coffee beans. Visitors can also shop Adkins’ newest brand, Townie Whiskey, a smooth-sipping, no-nonsense whiskey line, plus branded merchandise for all three ventures (think t-shirts, hats, and bandanas—for both humans and pups).
The project brings together a standout team of creative collaborators including architect Paul Salvaggio, designer Michael Gruber, creative design studio True Hand Design, and pizza consultant, Gregorio Fierro.
